Here's a couple reasons why FF13 is not coming to the Wii.
1.)Bleeding edge graphics.
The FF series has always been known for bleeding edge graphics for any platform period.
The Wii can't even handle first gen PS3 graphics let only FF13.
1) That may be true, but that doesn't mean the Wii can't/won't get some form of FFXIII, made specifically for it. Square has stated that they plan for the Fabula Nova Crystallis games to span multiple platforms, and as Darkheart pointed out one of the games is for mobile phones. So, well, there goes that argument. The Wii may or may not get part of FFXIII, but if the Wii doesn't it won't be because it isn't powerful enough.
2) If Final Fantasy were only about bleeding edge graphics, they would have been on the Xbox last gen. No, Squeenix is about great visuals no matter what platform they're developing for, and that includes the Wii. A Wii Final Fantasy will just mean Square pushing the
Wii to its graphical limit...even if that won't look as good as the PS3.

2.)The game is being built on the "White Engine". The White Engine is being built from the ground up for the PS3.
Don't expect Square-Enix to port it anytime soon now that they have UE3 onboard.
Nintendo might get a new FF13 spin off, but none of the current FF13 will ever see the light of day on Wii.
Actually, the white engine
started out for the PS2, it wasn't until the PS3 was unveiled and its specs released that Square upgraded it to PS3. Considering that, it wouldn't be entirely out of the question for a downgraded version of the White Engine to exist, or for Square to downgrade the Unreal 3 engine for use on the Wii.
Also, I think you're only thinking in terms of
one of the Final Fantasy XIII games. There are known to be 6 thus far, and not all of them have been slated to use the White engine. In fact, only the first one is actually
confirmed to be using the White Engine, and considering that one of the games is going to be on cell phones, and Squeenix just licensed an out-of-house engine, it isn't illogical to assume that not all of them will be using the white engine. This makes an environment for developing a Final Fantasy game on the Wii
very possible. It may not happen, sure, but to say it's out of the question is preposterous, considering what we know at this point.
Not only that, but there isn't going to be a "FFXIII" spin-off. Squeenix has said multiple times that each game in the Fabula Nova Crystallis series is going to be a stand-alone game in the same "universe". IF the Wii gets a game it most likely won't be a "spin-off", but it's own entry into the FFXIII universe.
Oh, and I think we're all forgetting that Square is definitely one of the most money-hungry game devs out there. They take their franchises wherever the money is (which is a major reason why DQIX is on the DS). The Wii is creaming both the 360 and PS3 in Japan, and it's leaving PS3 in the dust and closing in fast on the 360 everywhere else. Looking at those figures, and given Square's history and the fact that Nintendo would LOVE to have a main Final Fantasy on their console, I'd say it's VERY possible...
