You get credits for finishing the cups in Grand Prix. You then go into Customization, Shop, and then Racers to spend your credits on new racers. You can also buy new machine parts and story chapters in the Shop.

I have a custom machine, but I buy more racers just for the sake of their theme music. . . F-Zero has got some good stuff.  I really like the fact that each character has a different theme song, and Dr. Stewart's is especially cool.
