Simple. You need two GameCubes, two displays (either TVs or portable LCD screens), two Broadband Adapters, and a "crossover" Ethernet cable. Then you need two games that support the LAN gaming feature.

since we're on the LAN topic. Will we need a hub to play LAN? or would it be direct conenct between two Gamecubes?

For more than 2 Gamecubes, you'd need a hub. For 2, you can use a crossover cable as Rick said above.
