Myst (and the remake, realMyst)
Peter Jackson's King Kong: The Official Game of the Movie
Phoenix Wright: Ace Attorney
Phoenix Wright Ace Attorney: Justice for All
Portal
Riven: The Sequel to Myst
Sam & Max: Hit the Road
Sam & Max: Season One
Super Mario 64
Super Monkey Ball (I've beaten all except the "extra" levels)
Trauma Center: Second Opinion (playing through it on easy counts as beating it, right?)

Recommended for Fans:

Flight of the Amazon Queen
Myst III: Exile

Not recommended, except for Kairon:

Note that by "beaten" I don't mean "100% completed". Also, I've also beaten several web-based and text-based games which aren't listed here.

Hugo! I really liked that adventure series. Plus, I see no 8 or 16 bit era games there. What's the deal? You softcore?

No; he's like 16.  He couldn't manipulate a controller until the GameCube came around.
Why must all things be so bright? Why can things not appear only in hues of brown! I am so serious about this! Dull colors are the future! The next generation! I will never accept a world with such bright colors! It is far too childish! I will rage against your cheery palette with my last breath!

Yeah, or adventure games.

I love the Last Express. It recreates its time period and setting so well that just walking down the corridors of the train, and eavesdropping on people's converstations, is a joy. Unfortunatley, the gameplay is too annoying for me to recommend that everyone play it. Unless you get lucky, you'll wind play long sections of the game over and over again.
