I really liked episode III being the last one, geek tragedy feel and all. Seems to give hopelessness and hope all in the same movie.
That depends. Does she already know all the big reveals, i.e. Jedi Master Yoda is the weird little green dude, Darth Vader is Luke's father, Luke and Leia are siblings? If she doesn't, then you should definitely watch the OT first so those moments maintain their impact.
Personally, I'm a fan of the order 4 5 1 2 3 6, which gets you started with a bang, takes you through most of the big reveals, then flashes back to how it started before ending on a high note.
