They didn't take the effort into changing it.  They had to change it.  The old symbols they said used to resemble some arab sign or something, and people got upset and complained to Nintendo.

That will never cease to be the best Zelda quote. It's especially funny because if Link had dialogue in the games I just can't picture him ever being lippy with the princess.
