If I buy songs from the iTunes store will I be able to play them on a DAP that is not an iPod and such?

As long as the player supports AAC. iTunes has been DRM free for about a year and a half, but it uses AAC instead of MP3. AAC is a higher quality encoding, but the reason Apple uses it is the same reason Nintendo uses it: they don't have to pay a license fee. If your player doesn't support AAC it'll still work, but you'll have to convert them to MP3.

Any music currently being sold on the iTunes Store is 256k AAC. If you'd rather have MP3 you might want to check out the Amazon MP3 store; the way it's laid out is just terrible, but they have  most of the things iTunes has, but in MP3 format.

I find the best deals on Amazon MP3. New Arch Enemy album for $4.99? Sweet
Bless you, my child.
