Male VS. Female Pokemon

I would like to know what the differences are between a male pokemon and a female one. From my understanding, Males have higher Attack and Defense, while females have higher Sp. Attack and Sp Defense. Is that correct? And if so, a female ponyta with all non-physical fire attacks would make more damage then the same ponyta with all physical fire attacks?

Unless it has changed, I think Males have both higher Attack and Special Attack stats, while Females have higher Defense and Special Defense stats.

It's changed.  The differences are breeding capabilities, affect with charm-like attacks, probability to find a specific gender in the wild and picking them up, and in some cases, their battle sprite.

Gender stopped effecting stats in Ruby and Sapphire, and it really only effected stats minimally in Gold, Silver, and Crystal, IIRC.
