I haven't played it on the Gamecube but my brother rented it for the PS2 and I didn't really like it.  The game gets repetitive with moves and specials.  It's basically an arcade wrestling game with rappers.  Not much else.  I'd say give it a rental first and see if you like it.  Otherwise, I'd say wait for Wrestlemania XIX.

Based on gameplay alone Def Jam Vendetta is an absolute blast to play and is probably the best 3D wrestling game ever.  However it's really weak when it comes to features.  There are very few match types and you can't even do a computer vs computer battle.  Worst of all there NO Create-A-Wrestler feature.  My opinion is that it's inexcusable for a this game to have less features than Aki's N64 wrestling games so I'll never buy it.  It's a great rental though.  If a sequel featured more match types and features that, you know, games from like FOUR YEARS AGO were expected to have I would buy it.

The lack of a CAW really boggles my mind though.  In a game full of rappers and other non-wrestling related characters wouldn't it make the MOST sense to allow people to create their own wrestlers?  Why turn off wrestling fans who don't like rap?

Plays VERY similar to the "WCW vs. NWO" games on the N64.
If you were a fan of those games, you will like Def Jam Vendetta.
If you were a fan of those games and you like rap music, you'll LOVE DJV.
