It's more of a Gladiator Sports.

You'll have to wait for Nintendo to release Wii Fit Olympics: Winter & Summer Games (coming Holiday 2010) or just play Wii FIt Plus to get you snow ball fighting fix.

I recall the South Park FPS game on the N64 had 'yellow' snowballs as weapons.

Though I could totally see a snowball fight game being made on Wii. Make it an FPS where you run around with the nunchuck and you swing the wiimote like in Boom Blox to throw snowballs at people.
