but PSP doesn't have a 7" screen and touch controls so I can select my games by touching them.

Apple has found their way into the gaming market and with games like that, there is no one that can compete with them.

Is there also a ScummVM app for iPad? I imagine that will seal it's dominance in the handheld gaming sector for ever and a lifetime.

For nobody. Emulation isn't illegal, no matter what Nintendo says. Keep in mind you can't get this from the App store...iPad's already been JailBreak'd.

As a PSP owner I can tell you playing SNES on PSP is dreadful.
