Arcade Channel? For various new games, but there are slots for each game to have their own channel, so I imagine they will keep it like the VC games.
Oh! Trivia Channel! Or a daily channel, for example "10 years ago today"..... or
something that would show how "Today is Eat a lot of Kethcup Day" Each day has their Own Odd little thing about it. National Wear Polka Doys Day, Secretaries Day, Etc..
Where have you heard about new Channels being revealed?

And the DS Download channel is almost a reality since I think Iwata confirmed that the Wii could be turned into a DS Download station. They just need to release the upgrade and the channel to do so.

It isn't a "game demo" channel, but it's a totally different beast because its based on community. It could p[robably be linked to a game demo channel though...

or a Wii Radio channel? This could be combined with the Wii Music channel idea and have a special station used just for streaming videogame music!!!

Adit: Also, I remember reading this bit of a newspaper where the show a map of the world and pinpoint major ecological events that took place recently. They'd have markers for major earthquakes, tsunamis, tornadoes, hurricanes... whale beachings, zoo outbreaks, strange migrations, etc. That would be a sorta neat thing that straddles the line between news and weather... offering up these real, but bizarre stories about our natural world.

A Wii Aquarium/Anthill/screensaver channel! It could be based on the "After Dark 3.0" screensavers of old, and even feature your Miis walking in now and again!
They could drop into the Aquarium, Press their noses against the anthill glass... have cameos in all the screensavers!

From the vague description, this sounds to be Nintendo's official take on places like Mii Plaza.net and Mii Mega mall where users can post their Mii creations, show it off and have people vote for them.
It might even work as a gallery where you post your Miis, then have them be shown around the world, then you can visit galleries featuring Miis and rate them.

I wonder if this will be an upgrade to the Mii Channel. That would make the most sense. Just add a button underneath "Wii Parade" to "Show Off Mii" or whatever they want to call it.

That said... Nintendo needs a Quiz/Trivia Channel. Every day they'll post a different quiz on random bits of trivia, and Miis can take it. The next day, the quiz will be closed and they can see the answers and compare themselves to how other people did... then take the next quiz!
